7c. oats (old fashioned)
1 c.wheat germ, raw
1 c. coconut (bought)
1 c. sunflower seeds
1/2 c. walnuts or pecans (walnuts should not be used by thyroid patients)
1/2 c. sesame seeds
1/2 c. water
1/2 tsp. salt
1/2 c. brown sugar or honey
1/2 c. corn oil ( I'd use canola)
2 tsp. vanilla
Chop seeds and nuts in blender. Mix liquids, then combine with dry ingredients. Mix well. Spread on a large flat pan or cookie sheet. Bake @ 200 for 1 1/2 hrs. Stir occasionally. Add raisins, if desired. Let dry and store for later use.
Jo, I have made my own granola. I have a different recipe but this one sounds good too. I haven't made it for a long time. Maybe I will again soon. Thanks.
Here's my recipe:
3 cups Quaker Oats (Quick or Old Fashioned, uncooked) (It's a Quaker Oats cookbook :lol: )
1 cup shredded or flaked coconut
1 cup coarsely chopped nuts
1/4 cup honey
1/4 cup melted butter or margarine
1 and 1/2 teaspoons cinnamon
1/2 teaspoon salt
2/3 cup raisins
Combine all ingredients except raisins in ungreased 13 X 9 inch baking pan; mix well. Bake in preheated moderate oven (350 degrees F) for 25 to 30 minutes or until golden brown, stirring occasionally. Stir in raisins. Cool thoroughly; store in tightly covered container in cool dry place or in refrigerator. Serve as cereal with milk or as a snack.
Makes about 6 cups granola.
I made it without the coconut because I don't like coconut and it was delicious.
