Enchilada recipe
1 and a half pounds hamburger
1 small onion chopped
1 can fat free refried beans
1 small can chopped or sliced olives
chunky picante sauce ( I like Safeway Select)
1 large can or two small cans of red enchilada sauce (mild)
Shredded cheddar cheese
10 tortilla's - whatever size fits your pan (thinner types work better than puffier ones)
Filling:
brown the hamburger and the onions
add the can of refried beans, mix well
add the drained can of olives
add 1 cup of chuncky picante sauce
pour enough enchilada sauce to just cover the bottom of an 9 by 13 or larger pan
put about 1/3 cup of filling in the middle of a tortilla and roll it up
lay in pan seam side down
top with the remaining enchilada sauce
top with as much shredded cheddar cheese as you like
Bake at 350 until the cheese is melted about 15 minutes
These are easy to make ahead of time (keep refrigerated) and then bake later.
