1# evenly sized new potatoes, peeled and sliced on the thick side.
Cook in boiling salted water until they just fall off the tip of a knife when you stick it into the potato.
As soon as they are cooked, drain and put them into a bowl. It is very important to add the dressing while the potatoes are still steaming hot and allow them to cool down in the dressing so the flavors will penetrate.
Dressing
2 T lemon juice and 5 T of olive oil - (I used light) salt and fresh ground pepper to taste. You could also use fresh mint, fresh parsley or fennel tops. Mix. Yield 4 servings. There is no measurement for the fresh dill, I just grabbed what looked like it would make a tablespoon or two and ran my knife through it.

We tried a similar recipe from Rachael Ray's mag and enjoyed it. I am a huge fan of lemons and dill! Still like the cold one with mayo though on a warm summer day. Some people use miracle whip thinking it saves them some calories - oh how we dream!! We don't have it a lot so I don't worry about the bad fat!! AND I always buy the reduced fat though it sure isn't a lot reduced!! :lol:
BTY, I found a lot of great recipes in the mag - sure helps liven up the meals.
I too prefer mayo to Miracle Whip...but I'm not a big fan of mayo...lucky I guess since it is high in fat.
