Hi, has anyone ever tried pre-making and freezing the stuffing for thanksgiving dinners....and also freezing the mashed potatoes?? I hate making everything all at once and would really like to pre-make and freeze whatever I can for dinner......is this really bad??!!

I'm pretty sure the stuffing would do fine in the freezer but the mashed potatoes may not...I think it may change the potato's texture.

Sweet potatoes would probably do okay in a casserole. It is a big help to do things ahead...

Ok...I am reminded that somewhere I have a sweet pototo casserole recipe that I like.....I don't like candied ones.....

Diane, I agree with Jo that mashed potatoes may not freeze well, but why don't you try it beforehand. Like in the next week or two. Then you'll know without worrying about anything going wrong. Let us know how it goes.
