I have an easy recipe... I think it fits the bill. All cooks in one pot. I buy the boneless skinless ckicken thighs and clean them a little more if necessary. Need a deep frying pan with a cover - I usually use an everything pot or dutch oven thingy... brown chicken in pan (I use combo of a little oil and butter, and salt and pepper them. If there is a lot, I do this in batches. Do not cook chicken through but pile it all back in once all browned. Top with thin slices of lemon, including the skin. Top with veggies (I usually use canned artichokes), more sliced lemon, and salt and pepper to taste. Cover and Simmer for 45min to an hour. Serve with rice or whatever you like.
The more lemon, the more tender the chicken will be. I use tons and even eat it afterwards skin and all as it tastes great.
